Kodo Millet Salad

  • 1/2 cup Kodo Millet
  • 1/2 cucumber
  • 1/2 onion
  • ½ carrot
  • 1 tomato
  • 1/4 cup steamed corn
  • ½ cup pomegranate
  • Few coriander leaves
  • Salt as per taste
  • A pinch of ground black pepper
  • 1 lemon juice
  • Optional – Boiled or Roasted peanuts

Method Of Preparation

  1. Wash and soak 1 cup of Kodo millet for 3 hours
  2. Heat 2 cup of water in a pan and add soaked Kodo millet in to it. I generally add 4 times water of the Kodo millet quantity. Keep it covered for Kodo millets to be cooked in the boiling water on the medium flame. Salt as per taste can be added to it. Cook till the water is completely absorbed and Kodo is completely cooked. Cool it.
  3. Chop all the vegetables in small pieces.
  4. Take the Kodo in a bowl. Add to it cut onion, steamed corn, cucumber, carrot, tomato, pomegranate seed, coriander leaves
  5. Boiled or Roasted peanuts can be added for extra crunch and taste
